One of the first alcohol-free cocktails I came across was Amaretto sour. I just loved the sweet and tangy combination - and the scent of almond. This cocktail is perfect for after-dinner/dessert but can be consumed anytime.
UK/Australian brand Lyre's (who have an impressive range of 11 alcohol-free spirits) make a beautiful Amaretti. This is my own version of their Amaretti sour.
75ml Lyre's Amaretti
50 ml pineapple juice
20 ml lime juice
1/2 egg white
Shake, strain, pour and add an ice cube - OR do like me: blend it all together in a blender - makes it more foamy. Then add ice . Sprinkle a bit of cayenne pepper on top - mainly to make it look fancy 😊
If you can't get Lyre's Amaretti, don't worry! You can use
110 ml pineapple juice
30 ml lime juice
5-6 drops of almond extract
1/2 egg white
